Super Bowl is right around the corner. It is impossible to watch it without PIZZA! If you don’t want to completely blow your cleaner eating habits, this is the recipe for you: Zucchini crust pizza! I have been making this recipe for a couple of years. The zucchini crust has an amazing flavor and texture, so you do not feel like you are missing out. I also will include an easy sauce recipe.
Zucchini Crust Pizza
4 medium zucchini, grated
2 garlic cloves, minced (or 2 tsp canned minced garlic)
1 cup mozzarella for crust (more for top)
1 cup panko bread crumbs
1 egg
Salt and pepper to taste
Toppings of choice
cheesecloth
Preheat over to 425 degrees. Wring moisture out of grated zucchini using cheesecloth. Mix all ingredients besides topping in bowl. Spray pan with cooking spray of choice. Pout contents on pan and even out and press to make crust. You want to make sure the crust stays thick enough, so that it hold toppings and sauce. Bake for 15-20 minutes until the crust is brown and drier in texture. Spoon on sauce. Place toppings and cheese. Cook until cheese is bubbling and browning to preference. I usually cook another 20 minutes.
Pizza sauce
1-6 oz can tomato paste
1-15 oz can tomato sauce (or diced tomatoes drained and blended)
2 tbsp Italian seasoning
1-2 tsp garlic powder
1 tsp onion powder
1 tsp sugar
1 tsp paprika
Salt an pepper to taste
Mix all ingredients. Make sure sauce is not lumpy and paste is mixed in thoroughly. Now its ready to put on pizza crust.
