Are you good about meal planning but consistently find yourself without healthy snacks and hungry between meals? Try out this recipe, which has a small ingredient list and comes together quickly, and will keep you prepared for something quick at hand but healthy too!

INGREDIENTS
  • 2 tablespoon coconut oil
  • 1 whole plantain (ripe or green*)
  • 1/4 teaspoon salt or to taste
INSTRUCTIONS
  1. Slice plantain into 1/8″ – 1/4″ rounds.

Melt coconut oil in cast iron skillet over medium heat on stove top.
Set plantain rounds into the pan.
Cook the plantains on medium heat for 5 minutes on each side. The plantains should be golden yellow.
Sprinkle with salt to taste and serve.

NOTES

*The greener the plantain, the less sugar content. And the more ripe (yellow) the plantain, the sweeter it will be.
